This oil, obtained exclusively from the Gentile di Chieti olive variety, is the monocultivar strongly desired by Giuseppe Di Vito, to express the traditions of the Family and their native land, the Abruzzo region.
It has a decisive and gentle character.
A selected, limited and numbered product. Exquisite packaging inspired by the territory’s art.

Olive cultivar widely diffused and cultivated in the Abruzzo region, in the province of Chieti.
This variety is characterized by a constantly high productivity; the plants enter into production precociously starting from the very first years. The fruits have an average oil content and an excellent quality.
Rather rustic, this variety shows a particular tolerance to cold and winds.

ORGANOLEPTIC PROFILE

Olive oils characterized by a medium-intense level of fruitiness, bitter and spicy, with prevailing hints of grass/leaves and artichokes and light sensations of fresh almonds and tomatoes.
TYPICAL GASTRONOMY Particularly indicated to enhance traditional Abruzzese dishes. Advised to accompany the Vastese fish soup, pasta alla chitarra with tomato sauce with lamb, arrosticini (goat skewers), ventricina (typical salami from Vasto), chickpeas soup, cheese & egg dumplings, cheese & cured meat plates with Montepulciano d’Abruzzo wine.
  • Variety: 100% Gentile di Chieti.
  • Place of origin: Olive trees cultivated on hills in the Abruzzo region, Italy.
  • Harvest: Every year from end of October till December.
  • Harvesting method: Olives are harvested by hand using the stripping method, transported in boxes to the own olive mill and milled within 24 hours.
  • Production: Olives are washed with jets of water at room temperature and cold-pressed.
  • Extraction process: Continuous, extracted at less than 27⁰C.
  • Storage: in stainless steel tanks at controlled humidity and temperature (max 16-18⁰C).
  • Shelf life: 18 months from bottling. Keep in a cool dry place, far from direct light and heat. Always tap the bottle after use.
  • Quality control: Laboratory analysis and panel tests.
ORGANOLEPTIC FEATURES:
  • Acidity: From 0.2 until 0.4 when bottled.
  • Colour: Intense golden yellow with hints of light green.
  • Smell: Distinct smell of olives, medium fruity, with hints of herbs and vegetables.
  • Taste: Fruity, well-balanced, harmonious, with notes of artichokes and vegetables. Intense and well-balanced taste.
